All Saints' Day... and fall is already here

All Saints' Day

All Saints' Day, November 1st, is a very special date on the calendar. It is a day when families honor their deceased loved ones by remembering them with various offerings. Although it is not an especially joyful celebration, it can be observed in many ways: and at Made in Spain Gourmet it marks the beginning of autumn from a gastronomic point of view. But, returning to the initial question: what is the origin of the colors of autumn? Anthocyanins, betalains, chlorophyll, carotenes and xanthophylls are responsible for the beautiful shades of the leaves and plants we can enjoy in this season, such as greens, different yellows, reds and oranges, ochres or mustard tones, among others. Autumn may seem like a dreary season, when the rain arrives and the good tomatoes disappear. However, this time of year brings back a lot of fantastic products, ideal for dishes you crave when it gets chilly. Aren't you going to be one of those who accept what supermarkets offer you out of mere convenience? Enjoy what this time of year makes you want. Now we have to enjoy pomegranates and pears, but also chard and spinach, almonds or hazelnuts, and let's not forget chestnuts. And of course, pumpkins. Spinach with Chestnut Honey Vinaigrette and Walnuts

If you prefer seasonal salads, fresh spinach is ideal at this time of year. It is truly exquisite if you dress it with a vinaigrette made from Alemany chestnut honey, Ros & Caubó arbequina extra virgin olive oil and De la Cueva oloroso vinegar, and finally add some walnuts from Les Garrigues.
