Cold weather's coming — time for stew!

The cold is coming!

I remember that by the end of November it was time for puchero (a pot stew based on rice and/or legumes). Because it was simply a dish that provided energy and was full of plant and animal proteins (meat, chicken), and that you could have for at least two or three days a week. Verdina Bean, Despensa D’Lujo

The verdina bean is considered a gourmet bean. Its delicate flavor is ideal for accompanying recipes that include fish and seafood. And once cooked, they have an exquisite taste and their skin is so thin that it is barely noticeable, keeping the grain’s integrity intact so it never falls apart. At Despensa D´Lujo they grow them using traditional methods in Galicia, making use of resources so productions are sustainable, while at the same time they are in a constant process of innovation. They are young farmers who want to reclaim the land by cultivating the highest quality produce, for anyone who simply wants to eat well. Chickpeas with Spinach from Conservas Senra

Spinach and chickpeas is a traditional dish of Andalusian cuisine, in this case from the cuisine of Sanlúcar de Barrameda in Cádiz, where vegetables, legumes and bread are combined to produce a dish that, besides surprising with its excellent flavor, is rich in nutrients. Spinach, fresh tomato, chickpeas and other spices and seasonings form a tasty dish that only needs to be heated in a bain-marie or over low heat to enjoy it instantly. Menudo Choco from Conservas Senra

The menudo with chickpeas is a traditional stew from Cádiz made with chickpeas, spices, pork tripe (callos) and a bit of pancetta and chorizo. In this seafood version, increasingly popular in kitchens, we replace the pork tripe with choco (similar to cuttlefish and squid), resulting in a spectacular land-and-sea combination. A hearty stew that you only need to warm slightly in a bain-marie or over very low heat to enjoy. And a good oloroso wine such as Don Nuño from Lustau pairs perfectly. Albufera Rice from La Dehesa de la Albufera

Short-grain, pearly and translucent, it is the result of crossing the Bomba and Senia varieties. It has an excellent ability to absorb flavors and aromas, similar to Senia, and resistance to overcooking close to Bomba. Rice grown in the Albufera of Valencia, under the Protected Designation of Origin Arroz de Valencia. A true delight — all the grains selected are uniform in quality and size to achieve homogeneous cooking of the rice and thus obtain perfect dishes. At this time of year we can use it for meat stews, for example, and pair them with young wines such as a Banisio crianza red wine.
