We certainly like them all, made in every possible way. Spain has exceptional ones, but which are better, sheep or goat? Let’s start by clarifying that we like both—on their own, with jam or extra virgin olive oil, and to enjoy them at another culinary level. We’ll explain the differences between goat cheese and sheep cheese so you can pick your favorite, if you didn’t already have one. Their milk comes from different animals: as the names indicate, they are produced from two different animals, the goat and the sheep. Appearance: goat cheese is semi-soft while sheep cheese is more compact. Goat cheese looks like a creamy mass; on the other hand, sheep cheese is denser and won’t be hard to slice with a knife. Taste: both cheeses are strong and intense, but goat cheese is more tangy while sheep cheese is oilier. If you try them side by side you’ll easily tell which is which, since both are unmistakable. Nutritional value: if you’re looking for a cheese rich in vitamins and protein, sheep cheese is the choice, as it’s an important source of these nutrients as well as an excellent source of calcium. In addition, it’s good for growth and has notable benefits for the cardiovascular and nervous systems. Goat cheese, for its part, is easier to digest, is rich in protein and, since it’s low in potassium, is highly recommended for those who suffer from chronic kidney disease. They milk the sheep in a way that yields milk with characteristics and properties that are passed on to their cheeses and yogurts produced in the cheesemaking facility.
