A European recognition that protects the name of this territory so closely linked to Iberian products that they are distinguished from all others by being produced here. I must admit it was the Designation of Origin I knew least about, but it has become, rightfully, one of our favorites. The pigs of this area of Córdoba are a unique lineage, a legacy from our ancestors that gives each piece its character, flavor and perfect texture, thanks to their free-range rearing in the dehesas of Los Pedroches. The dehesa of Los Pedroches, in the north of the province of Córdoba, is the largest in the world with more than 360,000 hectares. This ecosystem has survived over time thanks to the balance between nature and human intervention through livestock, mainly the Iberian pig, Merino sheep and young cattle.
