To enjoy a good pairing, it's very important to consider the raw ingredient, and at Made in Spain Gourmet we take that very seriously. Today we will propose 4 pairings to harmonize your cured meats, all made with excellent-quality pork. The acorn‑fed Iberian ham (jamón ibérico de bellota) can be enjoyed on countless occasions. As a freshly sliced ham tapa for an aperitif, for a sandwich at teatime, accompanied by fried eggs... You decide how and when to have it. Quality ham stands out from the rest because it has veins of intramuscular fat that give it aromas of nuts and even herbaceous notes. This depends on the pig's diet. A penetrating, vigorous, refined sparkling wine with great depth. This is a broad, intense and robust cava, by far. Creamy to the touch, velvety, with very, very fine bubbles. [caption id="attachment_18227" align="aligncenter" width="800"]Top pairings: a wine for every Iberian Top pairings: a wine for every Iberian[/caption] Salchichón, such as the Salchichón De Payés pequeño Casa Riera Ordeix, has spicy nuances and pairs perfectly with a full-bodied white wine like the white Grenache VEGA VELLA Garnacha Blanca, a wine made with 100% white Grenache. Pale yellow with slight green reflections, complex, with aromas of white fruit, citrus and floral notes. On the palate it is unctuous and very full-bodied. The Salchichón de Payés de Casa Riera Ordeix is a natural product with a unique and distinct taste that mixes tradition and culinary innovation. It was born in 1995 with the aim of bringing traditional salchichón to all diners. It stands out for its flavor, thickness and color. The acorn‑fed Iberian chorizo, like the Chorizo Maldonado 100% Ibérico de Bellota Extra Campaña, has a very powerful flavor and therefore needs a partner of equal standing. 100% Acorn‑fed Iberian quality. The Chorizo Maldonado 100% Ibérico de Bellota is a spectacularly flavorful product. Stuffed in natural casing and matured for approximately 90–120 days with the mountain airs from the Sierra de San Pedro. Intense and bright red when sliced, with aromas that evoke the most traditional flavors. A true Spanish delicatessen product. For this chorizo I have chosen a full-bodied red wine such as the Rioja Fincas de Ganuza Reserva, 2015, red wine. A wine made with 90% Tempranillo, 10% Graciano. Cherry-red in color with a very good layer, very covered and bright. On the nose it is intense, complex and elegant, with aromas of red fruits and preserves. On the palate it is silky and persistent. The Iberian pork loin, like the Lomo Doblado Maldonado 100% Ibérico de Bellota, with its smoky tones, pairs well with fortified wines such as a Palo Cortado like the Palo Cortado de Jerez Cayetano del Pino y Cía. The solera for this wine is composed of only 22 casks that are aged in the winery Cayetano del Pino has in Jerez de la Frontera. Bright old-gold color with amber reflections. Very clean and lively. Delicate and piquant, notes of dried fruit stand out, recalling its biological aging stage. Very pleasant on the palate, notable for its roundness and unctuousness. A very glyceric wine. With a very long finish, it has a slightly bitter touch on the aftertaste that leaves a very clean palate. The Lomo Doblado Maldonado 100% Ibérico de Bellota is made using an artisanal production process. Practically free of external fat, seasoned with spices, condiments and authorized additives, stuffed in natural casings and subjected to an appropriate maturation period. Now all that’s left is to grab a seat, uncork a bottle of wine and accompany it with a great plate of 100% Made in Spain Gourmet Iberian products.
