The word vinegar comes from the French "vin aigre" (sour wine). It is a product obtained through the action of acetic bacteria on an alcoholic solution. And although vinegar can be produced from any alcohol-fermenting food (apple, beet, rice), today we present the one made exclusively from Sherry wines. The vinegar bottled for sale is drawn exclusively from the row of barrels at ground level, called the solera, which contains the oldest vinegars. The amount drawn from the solera, always a minimal part, is replaced by slightly younger vinegars coming from the row of casks immediately above: the first criadera. This same operation is repeated with the vinegar contained in the third row of casks, the second criadera, and so on.
