When you know that the best fish from Andalusia can be found at Conservas de Tarifa.

Conservera de Tarifa

With more than 100 years of history, it is one of Spain’s most traditional and emblematic canneries. Founded in the city of Tarifa, this family-run company has maintained, for over a century, its artisanal production methods and its commitment to quality, becoming a benchmark in the canned fish industry. One of our partners at Made in Spain Gourmet.

More than a century in pursuit of excellence

The Mediterranean Sea that bathes the coast of Cádiz is one of the treasures that provides gems enjoyed around the world. Countries like Japan would not find a better bluefin tuna than the one caught in this part of the Mediterranean. The brand Conservera de Tarifa is the result of the merger of La Tarifeña and Marina Real, and today it is the most traditional and artisanal seafood canning firm in the province of Cádiz. They have improved the external experience (packaging) to undertake international expansion, as the public becomes increasingly demanding about image. Production still takes place in the same factory as 100 years ago, maintaining the traditional artisanal care. They have managed to add knowledge, experience and excellence, while preserving the traditional family spirit that, generation after generation, for more than 100 years, has kept alive the work and dedication to canned fish. They also bear the unmistakable seal of Made in Spain Gourmet: a commitment to an artisanal production process and fish handled entirely by hand, which implies a higher proportion of jobs. It also requires longer production times. However, this guarantees the product’s excellence and purity. For us, as a family company that also values quality and products made with care and tradition, teaming up with them to share the tuna, the melva, and the mackerel of the Mediterranean with the world was natural. The products of Conservera de Tarifa are highly appreciated in Spain and internationally for their quality and authentic flavor, making them a staple for tapas, gourmet meals, and culinary enthusiasts seeking the coastal flavors of Spain. The brand emphasizes sustainable practices and traditional methods, resulting in a top-quality, environmentally friendly product.

Passion and tradition, without giving up the highest quality

Since its beginnings, Conservera de Tarifa has stood out for a few fundamental points that characterize it and make it one of those brands we carry with pride and great satisfaction. Sustainable fishing techniques: Especially the use of the Almadraba, an ancient fishing technique dating back to Phoenician times, used to capture bluefin tuna sustainably and with respect for the marine ecosystem. Artisanal production: Each product is processed by hand, from the selection and cleaning of the fish to its packaging, ensuring the preservation of flavor and freshness. Focus on local products: Signature products include bluefin tuna, mackerel, sardines, and anchovies, caught in the rich waters of the Strait of Gibraltar and canned in high-quality olive oils and special marinades. Conservera de Tarifa’s commitment to tradition and sustainability has allowed its products to maintain exceptional quality and be recognized in the global gourmet market. This combination of history, craftsmanship, and respect for the environment remains the key to its success after more than a century.

How is bluefin tuna caught?

Lookouts were responsible for signaling the arrival of the tuna from the watchtowers. Today, that story is part of Tarifa’s legacy—its product, its region, its people. The fleet that supplies us operates off the coast of Tarifa. With its strong currents, abundant food, and ideal temperatures, it is one of the best places in the world to catch wild bluefin tuna. Conservera de Tarifa is a well-known Spanish brand based in Tarifa that specializes in high-quality canned seafood products. Located along Spain’s southern coast, Conservera de Tarifa takes advantage of the local rich marine life from the Mediterranean and the Atlantic, using traditional artisanal methods to produce gourmet seafood preserves.

These are our selections at Made in Spain Gourmet

Bluefin Tuna (tarantelo and ventresca): Known for its tender texture and rich flavor, its reddish appearance, meatiness and spectacular taste. The olive oil used as the packing liquid supplies oleic acid. The combination of both results in a food that is extraordinarily beneficial for health. Mackerel, hand-packed and often preserved in olive oil or other marinades, is a popular choice for its intense flavor and texture. Tuna loin (Tronco de atún): An artisanal preserve of selected premium Mediterranean tuna loins with firm, red flesh that is very pleasant to the palate, highly appreciated in Japan where it is known as katsuo. Bathed in olive oil, it preserves its texture and flavor. A delicacy to enjoy daily in healthy recipes. Melva Canutera of Andalusia: Whole fillets of cleaned melva canutera loins, uniform in size and neatly arranged in the container. The fillets are whitish in color, with an intense and pleasant aroma and flavor characteristic of this species. Compact and firm texture, notable for its delicacy and low fat content. Artisanal preserve of premium mackerel roe from the southern Mediterranean by Conservera de Tarifa, bathed in olive oil to retain all its flavor. A true delicacy to enjoy on a cracker or to finish a salad. Mackerel roe is presented surrounded by a thin, natural, and delicate membrane. The olive oil used as the packing liquid provides a more intense flavor than sunflower oil, which is appreciated when paired with other foods, thereby enhancing its extraordinary taste. Enjoying the quality that our Mediterranean Sea can offer is now very simple with the selection from Made in Spain Gourmet, wherever you are.
