100% Acorn-Fed Iberian Chorizo Vela, Señorío de Montanera
100% Iberian chorizo is one of the most representative flavors of our culinary tradition. Its natural production begins in the workshop, where premium-quality lean cuts and meats from 100% Iberian acorn-fed pigs are selected and prepared to ensure the optimal qualities expected of a gourmet product. During curing, the expertise of a master charcutier, versed in the secrets of traditional gastronomy, brings out the conditions needed to enhance the essence of its unique organoleptic characteristics.
Señorío de Montanera 100% acorn-fed Iberian chorizo stands out for its marbled-looking slice, with a predominance of lean meat, and colors ranging from deep reds to vivid purple, with light almagre tones—typical of the noble cuts used in its preparation. Its aroma is warm and enveloping, and its pronounced flavor reveals notes of paprika and garlic, characteristic flavors of traditional Extremaduran slaughter-season charcuterie. Its texture offers exquisite juiciness, thanks to the natural intramuscular fat of pure Iberian products, which provides exceptional palatability.
