100% Iberian acorn-fed shoulder ham Navarretinto «Pata Negra»
Ham is the noble cut par excellence. It comes from animals over 22 months old and weighing 160 kilos. Only sea salt is added to the hams and, after a short salting period, they first go to the drying room and then to the cellar. In total, they undergo more than 24 months of curing and maturation, during which, in addition to chemical changes and the formation of aromatic compounds, they lose around 35% of their fresh weight.
The black hoof, synonymous with authentic genetics, and the slender shank are characteristic of 100% Iberian acorn-fed hams. Among their attributes are their “flavour” (combined aroma, taste and texture), the glossy lean meat and the fluidity of the fat, all unmistakable qualities that, when tasted, create a series of sensory perceptions that awaken the senses and enhance their unsurpassed “bouquet”.
These are 100% Iberian acorn-fed hams fully certified by accredited certification bodies in accordance with the Iberian Quality Standard set out in Royal Decree 4/2014.

Best-before date: It does not have an expiry date, but it is recommended to consume it within 6 months from the time of sale.
Storage conditions: Store in a cool, dry place (between 10º and 20º), preferably hanging. Once sliced, it should be consumed immediately or wrapped in waxed paper or cling film to avoid contact with air. In any case, it is advisable to cut only what is going to be consumed. Once cutting has begun, the approximate consumption period is 3 months, although it is best consumed within 30 days.
