Navarretinto 100% Iberian acorn-fed ham “Pata Negra”
Ham is the noble cut par excellence. It comes from animals over 22 months old and weighing 160 kilos. Only sea salt is added to the hams and, after a brief salting period, they go first to the drying room and then to the cellar. In total, more than 36 months of curing and maturation, during which, in addition to chemical changes and the formation of aromatic compounds, they lose around 35% of their fresh weight.
Characteristic features of 100% Iberian acorn-fed hams include the black hoof, synonymous with the authenticity of their genetics, and the slender shank. Among their attributes are their “flavour” (combined aroma, taste, and texture), glossy lean meat, and fluid fat, which are unmistakable and, when tasted, create a series of sensory perceptions that awaken the senses, enhancing their unsurpassed bouquet.
These 100% Iberian acorn-fed hams are fully certified by accredited certification bodies in accordance with the Iberian Standard set out in Royal Decree 4/2014.
