“Son Dalabau” sobrasada stands out for its low saturated fat content and high level of oleic acids, similar to those found in olive oil, making it a healthier option without compromising on flavor.

This product has been recognized for its quality, even becoming a favorite of figures such as King Juan Carlos I during his visits to Mallorca.

The combination of high-quality ingredients and a traditional production process makes “Son Dalabau” sobrasada a gastronomic treasure that reflects the culinary richness of the Balearic Islands.

Son Dalabau offers us a 100% artisanal product with a low fat content, since only breeding female pigs are used, never males, as they have greater fat infiltration and a better aroma.

Its production consists of two stages: first it is seasoned, then it is stuffed into natural pork casing, and finally it undergoes a slow, natural curing process.

Ingredients

Pork fat with antioxidants (E-320, E-321), lean pork, salt, spices and sugar. Stuffed in non-edible natural pork casing.

Curing: Natural process in drying rooms for a minimum of 6 months, ensuring exceptional texture and flavor.

Presentation: Available in 250 g and 500 g formats, vacuum-packed to preserve freshness.

Origin: Llucmajor, Mallorca.

Storage: Keep in a cool place (between 10º and 20º) and preferably hanging, although we recommend keeping it refrigerated, between 6-8 degrees.

Son Dalabau

The Valenzuela family had a dream, numerous recipes, and three generations of research with one single intention: to make the finest sobrasada. They focus on a distinctive production process that allows them to carry out every stage by hand while maintaining exacting quality standards, with limited production. They produce only during the months when the climate is ideal for making and curing, just as tradition dictates. They use only natural maturation regulators such as paprika, pepper, and salt. They devote to each piece the time it deserves, carrying out the processes by hand and making every piece something unique. The main raw material for sobrasada is meat and fat in the proper proportion. What makes Son Dalabau special is the manual selection of prime cuts and their subsequent cleaning to achieve a purity level above 98%. The selection of “desrabado” paprika and the spice blend is key to achieving the ideal organoleptic balance, avoiding harsh notes and ensuring a good fermentation process over the months. In addition, the kneading point is different for each batch and crucial for achieving a smooth, spreadable texture that does not stick under the tongue. Historically, homemade sobrasada was made between November and February, when the pigs were fattened and Christmas was celebrated. Beyond its cultural meaning, as there were no artificial drying rooms to ensure the correct temperature and humidity at any time of year, the only suitable moment occurs naturally in Mallorca during the winter months. Separating sobrasada, the countryside, and livestock farming is impossible; for this reason, we decided to adorn each of our pieces with an olive-wood tag engraved with our brand and varnished by hand, one by one. Olive cultivation in Mallorca dates back to pre-Roman times, becoming the island’s predominant crop and a source of livelihood for the population around the 18th and 19th centuries.
