La Casota young goat cheese:
A pressed-paste cheese made with 100% pasteurized goat’s milk and aged for a minimum of 7 days.
Production process:
Milk is collected and transported to the dairy. It is processed in vats, heating the milk between 28°C and 32°C for 30 to 60 minutes until coagulation. The curd is drained and pressed in molds for a minimum of 4 hours. It is then unmolded and salted by immersion in brine.
Organoleptic specifications:
White rind. Smooth texture. Dairy aroma and flavor, with pronounced notes of goat’s milk. Mild and refreshing taste.
Ingredients: Pasteurized goat’s milk, calcium chloride, lactic cultures, rennet, and salt.
Allergens: Milk as the sole raw material used in the production of the cheese.

Storage
The ideal temperature for storing the cheese is 8 – 10 ºC. Once opened, consume within 15 days.
