Made with raw milk from Manchega-breed sheep, it guarantees a firm texture and an ivory-colored interior. Its artisan aging takes place over 9 to 12 months, reaching its full sensory expression

Storage

The ideal temperature for storing the cheese is 8 – 10 ºC. If we want to slow the development of the cheese and the molds on the natural rind, the temperature should be 4ºC.

The milk is collected in mechanical milking rooms with immediate refrigeration, allowing the cheese to retain its freshness without losing its natural aromas, since the milk is not exposed to high temperatures. Queso Manchego DOP Villajos is available in three varieties: semi-cured, cured, and aged, offered in different formats to suit each customer’s needs.
