Variety: 100% Palomino

Tasting note:
Intense, bright amber color with coppery highlights. Aromas of hazelnut praline and candied orange peel, with notes of varnish and fine cabinetmaking over a smoky wood background. Dry, pungent and savory, with refreshing acidity. Delicious, spicy salinity with an extraordinarily long finish.
Serving temperature: 13-14º C
Viticulture: 100% Palomino from the Montegilillo vineyard, in the Carrascal pago, with albariza soils, very well suited to growing Palomino grapes.
Winemaking: Subjected to double aging. First, a stage of biological aging under a veil of flor yeast, and later, once the veil disappears, a stage of oxidative aging begins. Through concentration, after almost 20 years of aging, the alcohol content rises to over 20% vol. Aged for 18 years in the Castillo de San Marcos winery, in the coastal city of El Puerto de Santa María.
Pairing: Serve with consommés, foie gras, cold or smoked meats, cheese boards, oily fish or seafood. This wine pairs very well with highly spiced dishes.
