Anchovy fillet (Engraulis encrasicolus)
Anchovies in vinegar are a classic of Spanish gastronomy and one of the star appetizers on our tables. Enjoyed on their own or paired with good potato chips, pickles, a little red pepper, or olives, anchovies in vinegar are a very appetizing food, and certainly also healthy and beneficial in helping combat conditions as varied as diabetes, arthritis, depression, asthma, inflammatory disorders, and circulatory system diseases.

Ingredients: Anchovy fillet (Engraulis encrasicolus), extra virgin olive oil (EVOO), wine vinegar, and sea salt

Pairing: best enjoyed with paprika, sliced garlic, and parsley. Serve at room temperature. Ideal on crackers such as those from Paul & Pippa or on good bread. We also recommend them in salads with gourmet lettuce and good tomatoes. And, of course, we can pair them with a good white wine—Penedès, Verdejo, Albariño—or why not a premium cava, a vermouth, or a frizzante such as La Mundial, all of which you will find at Made in Spain Store.
