The crews are made up of local sailors whose lives have always been tied to the sea. The catches are auctioned at the Rianxo fish market and come with all the guarantees of the “PescadeRías” certification.

Bou de Vara small sardines are caught in July, when their culinary qualities are at their very best. The sailors go out “á lusada”, returning to shore with the first light of day, when the fish is at its finest for preparation. The sardines are removed from the nets one by one, preserving the integrity of the scales and flesh, without piling them up so they are not crushed, and with natural cold while avoiding direct contact with ice. The finest ingredients are used, including extra virgin olive oil in the highest proportion, to create a truly exceptional final product.
