During a few very specific days, at the beginning of the harvest season in October, this oil is made from green fruit to achieve its unique attributes. At least 20 kg of olives are needed to obtain 1 liter of product, because when green the olive has not yet fully developed its oil. So you can imagine just how exclusive this oil is.

Watching its Manzanilla Cacereña extra virgin olive oil flow across the surface of a plate anticipates the pleasure of its pure, deep, vibrant flavor. Used raw or added during cooking, it is an essential element of the traditional cuisine of our land. Its qualities also make it highly suited to the most contemporary gastronomy.

Superior-category monovarietal extra virgin olive oil made from absolutely green Manzanilla cacereña olives. From olive groves grown in “Red Natura 2000” areas of special environmental protection. Traditional, rain-fed cultivation.

Harvesting system: hand-picking, olive tree by olive tree.

Extraction system:| Made cold from the first extraction and immediately after the fruit is harvested. Milling at controlled speed.
Storage: Stainless steel tanks inerted with nitrogen gas. Decanted before resting in the cellar.

Storage conditions: It is recommended to always keep it protected from light, to slow down oxidation.

Best before: 18 months from bottling.

Tasting notes:

Its aroma is exclusive, unique, different. Highly complex, with multiple sensations. It bursts forth with an intense green fruitiness of apple and leaf, with a clarity reminiscent of the freshness of summer fruits. Notes of banana, green almond, flowers and vanilla, pepper and cinnamon also appear. And in the background, the evocation of a holm oak forest, the atmosphere of its origin.

The palate is pure and clean, sweet at first and soon enveloping, with its warm bitterness, its liveliness, and its measured pungency.

And the finish, full of calm, persistent energy, with memories of leaf and green olive, the essence of nature. MO comforts like an invocation of basic and eternal elements. Bread, fresh water, rosemary and rockrose, figs and grapes. Stone, trunk, flower.

Pairing: It is the ideal companion for enhancing salads, vegetables, sauces, and vinaigrettes when used raw. (perfect for emulsified sauces). It is also ideal paired with Iberian cured meats (just a few drops) and with cured and aged Manchego cheeses.

As part of its ongoing commitment to environmental care, in September 2007 Jacoliva opened an innovative treatment plant for the water used to clean the olives and for the mill’s wastewater. Thanks to this new purification system, the water used in the olive oil production process can be returned to public waterways or used for irrigation.
