Producer: Jacoliva

Origin: Northern Cáceres province. Sierra de Gata, Las Hurdes, and Valle del Alagón districts (Extremadura).

Variety: Coupage, predominantly Manzanilla cacereña. From olive groves grown in “Red Natura 2000” areas of special environmental protection. Traditional, rainfed cultivation.

Extraction system:| Made using mechanical cold processes from the first extraction.

Storage conditions: It is recommended to keep it protected from light at all times to slow oxidation.

Best before: 18 months from bottling.

Tasting note:

Color

Intense green color with yellow highlights.

Aroma

On the nose, an intense fruitiness of green olives.

Flavor

On the palate, incredibly sweet, contrasting with the green of its color, lightly bitter, almond-like, and somewhat more peppery.

Pairing: It is the ideal companion for cooking, salads, vegetables, sauces, and vinaigrettes. (perfect for emulsified sauces) It is also completely surprising in desserts and sweets such as brownies.

Today, under the direction of Mr. Justino Damián Corchero Montero, the ISO 9001 and ISO 14001 quality standards have been implemented, confirming the organization’s expertise and commitment to its environment, customers, and suppliers.

As part of its ongoing commitment to environmental care, in September 2007 Jacoliva opened an innovative treatment plant for the water used to clean the olives and for the mill’s wastewater. Thanks to this new purification system, the water used in the olive oil production process can be returned to public waterways or used for irrigation.
