Artisanal Manchego Cheese with Protected Designation of Origin, made with raw sheep’s milk.
Its paste has an ochre and reddish hue, the result of its long maturation inside, with a light golden rind.
The paste is firm, compact, and beautifully dense. Its texture is slightly flaky, a sign of its superb maturation. It matures in the cellars under the supervision of the master cheesemaker.
Its aroma is intense, lactic, and floral, from the clean raw milk of Manchega sheep.
A pleasant, intense flavor, with a distinctive and lingering aftertaste where all its magnificent qualities come together and remain.

Every Manchego cheese is identified on one of its flat sides with a numbered and serialized casein label.
Storage
The ideal temperature for storing the cheese is 8–10 ºC. If we want to slow the evolution of the cheese and the molds on its natural rind, the temperature should be 4ºC. The minimum best-before period is 8 months, although the expiry date is set at 12 months.
