Their pigs spend the first stage of their lives on the farm, feeding on natural cereals prepared in its own facilities until they reach a weight of between 40 and 50kg, when they move into the dehesa pastures.

There they enjoy an exquisite diet made up of this selection of cereals as well as grasses, tubers, roots, and acorns, reaching 90/100kg by early October (when the montanera season begins), the time when the acorns fall and on which they feed exclusively until reaching an approximate adult weight of 180kg. This is essential for preserving the Iberian breed and for the product to be called acorn-fed Iberian.

This sliced 100% acorn-fed Iberian salchichón is made following our grandparents’ oldest recipe, preserving the legacy of authenticity and natural flavor. The meats are selected with exceptional care and attention, leaving only a minimal amount of fat before being coarsely minced.

Tasting Notes

This product offers a delicious, firm texture, a balanced and lingering flavor with hints of pepper, and the juiciness of authentic 100% acorn-fed Iberian pork. Stuffed in natural casing and traditionally dried and cured for 5 to 6 months, using the latest technologies to ensure the highest quality. Its low preservative content makes it one of the most natural and wholesome products.

The Protected Designation of Origin, or P.D.O., is a regulated quality seal that guarantees a product has been made according to a specific process in a specific region. This ensures exclusive, consistent quality across all products sharing the same Designation of Origin. With regard to Iberian shoulders and hams, which come from animals that comply with Iberian pig regulations, there are only 4 in the world.

Its origins date back to the early 1930s, when Bernardo Hernández Blázquez, founder of BEHER, began selling the first Iberian products he crafted artisanally.

In the 1970s, Bernardo Hernández García, the founder’s son, took over, growing BEHER exponentially and internationalizing the brand through its first exports. It was at this time that the company incorporated the breeding of native 100% Iberian pigs, where the genetic selection established from the very beginning has proven to be the key to achieving the current excellence of its products.

With the turn of the century and the arrival of the third generation, led by Bernardo and Jorge Hernández Tinoco, BEHER had become a consolidated company recognized worldwide, controlling the entire production process: from pig breeding to preparation and curing, and finally to showcasing and selling its Iberian products through an extensive distribution network and its shops and restaurants across Spain and Portugal.
