Technical sheet:

Their pigs spend the first stage of their lives on the farm, feeding on natural cereals produced on-site until they reach a weight of between 40 and 50kg, when they gain access to the dehesa pastures.

There they enjoy an exquisite diet made up of this selection of cereals, along with grasses, tubers, roots, and acorns, reaching 90/100kg in early October (when the montanera begins), the moment when the acorns fall and on which they feed exclusively until reaching an approximate adult weight of 180kg. This is essential for preserving the Iberian breed and for it to be designated acorn-fed Iberian.

These Iberian hams, thanks to the breed that defines them and their exquisite diet, have an elongated, elegant shank with golden, fluid fat on the outside, while inside they reveal a rosy, melt-in-the-mouth appearance that fills the palate with intense, lingering nuances.

Tasting Note

Organic 100% Iberian Cebo de Campo Ham stands out for its intense ruby-red color and fine marbling, with a high oleic acid content that helps maintain optimal cholesterol levels.

On the nose, this ham releases intense, pleasant aromas that reflect its distinguished identity and unique personality.
On the palate, it reveals a deep, persistent flavor, with a characteristic sweetness that comes from a reduced salting process and extended maturation, resulting in a deliciously healthy product that delights every taste.

What is Protected Designation of Origin?

Protected Designation of Origin, or P.D.O., is a regulated quality seal that guarantees a product has been made following a specific procedure in a specific region. This achieves exclusive, consistent quality across all products that share the same Designation of Origin. In the case of Iberian shoulders and hams, which come from animals that comply with the regulations for Iberian pigs, there are only 4 in the world.

  • D. O. Guijuelo: located in Salamanca.
  • D. O. Los Pedroches: from the province of Córdoba.
  • D. O. Jabugo: from the Sierra de Aracena and Picos de Aroche, in Huelva.
  • D. O. Dehesa de Extremadura: where the one million hectares of dehesa pastureland we have in Extremadura are an ecological paradise for our pigs.

Beher

Its origins date back to the early 1930s, when Bernardo Hernández Blázquez, founder of BEHER, began selling the first Iberian products he crafted artisanally.

In the 1970s, Bernardo Hernández García, the founder’s son, took over, growing BEHER exponentially and internationalizing the brand through its first exports. It was at this time that the company incorporated the breeding of native 100% Iberian pigs, where the genetic selection established from the very beginning has proven to be the key to achieving the current excellence of its products.

With the turn of the century and the arrival of the third generation, led by Bernardo and Jorge Hernández Tinoco, BEHER had become a consolidated company recognized worldwide, controlling the entire production process: from pig breeding to preparation and curing, and finally to showcasing and selling its Iberian products through an extensive distribution network and its shops and restaurants across Spain and Portugal.

Today, the fourth generation is beginning to play a role, and at BEHER they remain firmly committed to the quality and authenticity of all their products. The digital environment, innovation, and new technologies drive them to continue working hard to adapt to changing times and to the needs and tastes of the market.

Present in more than 50 countries across 4 continents, BEHER is a guarantee that its determination to go further aligns with our philosophy.
