Organic Vegan Mayofaba, Casa Amella

Organic Vegan Mayofaba® is the first vegan mayonnaise on the Spanish market made with aquafaba, the cooking liquid from local organic chickpeas which, thanks to its natural emulsifying properties, becomes the perfect plant-based alternative to egg.

With just five organic ingredients—high-oleic sunflower oil, aquafaba (32%), lemon juice, sea salt, and xanthan gum—it achieves a creamy, stable texture and a mild flavor very similar to traditional mayonnaise, but with no egg, no milk, and no unnecessary processed ingredients.

Unlike other vegan mayonnaises, it contains no modified starches, added sugars, or powdered soy. It is a clean, simple recipe, made just as you would prepare it at home.

At Casa Amella (Catalonia), they are committed to artisanal and sustainable production, reusing the chickpea cooking water to reduce food waste and preserve the legume’s water-soluble nutrients. The result is an organic, nutritious, and environmentally friendly mayonnaise.

Storage

When Dani founded Casa Amella in his uncles’ garage back in 2002 in Castellterçol, he wanted to share with more people the privilege he enjoyed: healthy cooking based on village products grown with care and respect for the land. The aromatic stews that his mother, Carmen, prepared following the tradition of his grandmother María Josefa helped Dani appreciate home cooking from childhood. Meanwhile, days spent in nature with his grandfather Isidre, a farmer, and his grandfather Francisco, an animal lover who enjoyed going hunting without firing a single shot, taught him where the ingredients on his plate came from and the importance of caring for the environment.
