Organic Elixir Extra Virgin Olive Oil, Cuadrat Valley

The oils come from the same olive variety, Arbequina, grown in the Cuadrat Valley family olive grove. They are all "EXTRA VIRGIN PDO Les Garrigues". The different harvest periods of our olives result in differences in fruit ripeness and the fruitiness of the oil, expressed in our four varieties or selections.

They all offer the vibrant fruitiness of fresh olives, with green aromas of grass and artichoke, interwoven with subtle notes of almond and fresh apple. They also contain all the essential nutrients: fatty acids (protection against vascular disease), aromatic molecules (antioxidants), and vitamins A and E.

Tasting notes – ELIXIR EVOO · Cuadrat Valley

Visual phase:

Bright, clear golden-green color, with reflections that evoke still-young olives. Its density is medium, elegant in the glass, anticipating its sensory richness.

Olfactory phase:

On the nose it is intense and fresh, with a distinctly green and vegetal profile. Aromas of freshly cut grass, olive leaf, artichoke, and a subtle background of green almond can be detected. Its complexity unfolds with nuances of tomato plant and green apple, suggesting an early, careful harvest.

Gustatory phase:

On the palate it is balanced and powerful. A silky, fluid opening gives way to medium-high intensity, with flavors that confirm the aromas perceived on the nose: herbaceous notes, raw almond, and a balsamic touch. The pungency and bitterness are present, well integrated, with a slightly sharp finish reminiscent of green chili and white pepper, bringing a lively, elegant sensation.

Aftertaste:

Persistent, complex, and harmonious. The flavor lingers for a long time, with echoes of green leaf, gentle spices, and a freshness that invites another bite.

Recommended pairing:

Ideal raw over artisan bread, fresh tomato, carpaccios, white fish, or shellfish. It also enhances mild cheeses, grilled vegetables, and haute cuisine dishes with a plant-based foundation.

The Estate

Cuadrat Valley is located in the province of Lleida (Spain), between the villages of Albagés and Juncosa, 120 km west of Barcelona. Of its 90 hectares of land, 62 are devoted to olive cultivation, while the rest of the estate is home to native shrubs, groves and woodland, a truffle oak grove, almond trees...

Cuadrat Valley lies at the heart of beautifully preserved nature, shaped by the artful dry-stone construction recognized as UNESCO intangible cultural heritage. The terraces, drinking troughs, and vaulted huts emblematic of the Les Garrigues region surround, shape, and humanize the landscape.

THE ARBEQUINA

Small, round, symmetrical, highly aromatic, and pale green in color, the Arbequina is an olive typical of Catalonia. It is the star of Les Garrigues. Legend has it that it was brought from Palestine in the 18th century by the Duke of Medinaceli, lord of Arbeca and descendant of the powerful Dukes of Cardona. It produces one of the finest oils in the world, guaranteed by the "Les Garrigues" PDO (Protected Designation of Origin).

THE LES GARRIGUES PDO

The Les Garrigues region is one of Catalonia’s oldest olive oil-producing areas. It is no coincidence that it holds Spain’s oldest Protected Designation of Origin for extra virgin olive oil (1975, certified by the European Union in 1996). The terrain and climatic conditions are the strengths of this PDO, which is characterized by low acidity and numerous organoleptic qualities such as a beautiful green color and fruity flavor.

Storage

Darkness: away from direct light, especially sunlight, because it degrades polyphenols and chlorophyll.

Stable temperature: ideally between 16 °C and 20 °C. Avoid both heat (kitchen, near ovens) and excessive cold (never in the refrigerator except in extreme climates).

Closed container: always tightly sealed, because oxygen is another major enemy.

Consumption: although it can keep, it is best enjoyed in the year of its harvest to appreciate all its freshness and aromatic nuances.

Cuadrat Valley

A family legacy among olive groves and vineyards The story of Cuadrat Valley is one of return, roots, and a passion for the land. It all began in L'Albagés (Catalonia), where the Cuadrat family had cultivated olive trees for generations. In the 1930s, Sebastià Cuadrat Realp had to leave his homeland, fleeing the war and leaving behind the olive grove of his grandmother Magdalena Sardà. Eight decades later, his granddaughter Evelyne Cuadrat Teycheney, together with her husband Patrick and their daughter Caroline, decided to revive that interrupted dream. Since 2014, the family has been restoring and acquiring estates, consolidating a property of 90 hectares managed according to the principles of sustainable agriculture, with a firm commitment to environmental respect and excellence. Their goal: to produce a Les Garrigues PDO extra virgin olive oil capable of competing in quality with great wines. Meanwhile in Bordeaux, Patrick and Caroline are developing their Grand Cru biodynamic wine project in Saint-Émilion; in L'Albagés, Evelyne and her cousin, the architect Josep-Maria Cuadrat, have built a state-of-the-art olive mill. Inspired by precision viticulture, they apply the same level of rigor and savoir-faire to the world of EVOO. At Cuadrat Valley, olive oil is crafted with the same respect for the terroir, the same care for every detail of cultivation, and the same passion found in the world’s finest vineyards.
