The Cantera de Santa Ana estate is located in a privileged setting known for centuries as the “Monte de las viñas” (“Hill of the Vineyards”).
They are committed to quality, passionate and responsible viticulture. Production is limited, as they work exclusively with grapes from the estate: Chardonnay, Syrah, Garnacha tinta, Merlot, Cabernet Sauvignon and Tempranillo. Green pruning, thinning, selected harvesting, macerations, malolactic fermentation in barrel, ageing in oak and bottle, the passage of time… these are some of the tools they use to craft their wines.

Grown in the traditional “bush vine” style. Selected and hand-harvested in crates. Made using the traditional saignée technique and handled with great care to achieve its finest aromatic expression. Limited production of 1.072 75cl bottles and 75 150cl magnums.
Pairing: at Made in Spain Gourmet we recommend it with salads, pasta, fish and seafood. Also as an aperitif with our preserved seafood, such as mussels from Conervas Nosa or DelaCueva.

Technically, rosé wine is made like a white wine, not like a red. Nomeolvides is made with Garnacha tinta grapes using the saignée technique.
After harvest, the grapes are taken to tanks to macerate with their skins.
These are called lágrima rosés because this is the time during which the grape skins “weep” to give them their color and aroma. This traditional Navarrese method is carried out only with red grapes. And a Navarra rosé made using this method is a guarantee of quality.
The Cantera de Santa Ana estate is “Suelo, Moncayo y Cierzo”.
Moncayo, majestic as the highest peak of the Iberian System, protects them by trapping the clouds and cold Atlantic air. Its imposing size and aura of a sacred mountain create a unique, almost magical landscape.
Alluvial soil with limestone earth. Fast-draining and cool at depth. Exceptional for viticulture.
The Cierzo: that cold, dry wind from the northwest. When it blows, it keeps their grapes healthy and their nights fresh.
