100% Acorn-Fed Iberian Ham Oro Pata Negra, Beher

Technical sheet:

The pigs spend the first stage of their lives on the farm, feeding on natural cereals produced on-site until they reach a weight of between 40 and 50kg, when they are moved to the dehesa pastures.

There they enjoy an exceptional diet made up of this selection of cereals, as well as grasses, tubers, roots and acorns, reaching 90/100kg by early October (when the montanera season begins), the moment when the acorns fall and become their exclusive food until they reach an approximate adult weight of 180kg. This is essential to preserve the Iberian breed and to be able to call it acorn-fed Iberian.

These Iberian hams, thanks to their characteristic breed and exquisite diet, have an elongated, slender shank with golden, fluid fat on the outside, while the inside reveals a pink, melting appearance that fills the mouth with intense, lingering nuances.

Tasting Note

In the 100% Iberian Acorn-Fed Ham Oro “Pata Negra” we discover a ruby-red hue, delicate marbling and a high percentage of oleic acid, which helps maintain an adequate level of cholesterol in the blood, as well as being rich in protein, vitamin B1, iron, zinc, magnesium, folic acid and vitamin E (an excellent antioxidant). On the nose, we detect intense and pleasant aromas exclusive to 100% acorn-fed Iberian ham, reflecting its character and personality. On the palate, we appreciate an intense and persistent flavor with the characteristic sweetness of BEHER Oro 100% Iberian Acorn-Fed Ham, due to a shorter salting time and long maturation, achieving a healthier and tastier product, enjoyable for every palate.

Qualitative/quantitative composition: 100% Iberian acorn-fed ham, salt, sugar, antioxidants E-331iii, E-301; preservatives: E-252.

Designation of O

What is Protected Designation of Origin?

Protected Designation of Origin, or PDO, is a regulated quality seal that guarantees a product has been made according to a specific process in a specific region. This ensures exclusive and consistent quality across all products that share the same Designation of Origin. Regarding Iberian shoulders and hams, which come from animals that comply with Iberian pig regulations, there are only 4 in the world.

  • P. D. O. Guijuelo: located in Salamanca.
  • P. D. O. Los Pedroches: from the province of Córdoba.
  • P. D. O. Jabugo: from the Sierra de Aracena and Picos de Aroche, in Huelva.
  • P. D. O. Dehesa de Extremadura: where the million hectares of dehesa pastureland available in Extremadura are an ecological paradise for our pigs.

Beher

Its origins date back to the early 1930s, when Bernardo Hernández Blázquez, founder of BEHER, began selling the first Iberian products he crafted artisanally.

In the 1970s, Bernardo Hernández García, the founder’s son, took over, growing BEHER exponentially and internationalizing the brand through its first exports. It was at this time that the company incorporated the breeding of native 100% Iberian pigs, where the genetic selection established from the very beginning has proven to be the key to achieving the current excellence of its products.

With the turn of the century and the arrival of the third generation, led by Bernardo and Jorge Hernández Tinoco, BEHER had become a consolidated company recognized worldwide, controlling the entire production process: from pig breeding to preparation and curing, and finally to showcasing and selling its Iberian products through an extensive distribution network and its shops and restaurants across Spain and Portugal.

Today, the fourth generation is beginning to play a role, and at BEHER they remain firmly committed to the quality and authenticity of all their products. The digital environment, innovation, and new technologies drive them to continue working hard to adapt to changing times and to the needs and tastes of the market.

Present in more than 50 countries across 4 continents, BEHER is a guarantee that its determination to go further aligns with our philosophy.
