From each pig weighing more than 160 kg., fresh pieces of approximately 2,0-2,5 kg grams each are obtained.
Once the process is completed under slow, gentle curing conditions, with a final weight loss of 44%, we obtain a product that, thanks to its typical marbled appearance with irregular streaks, consistent and uniform texture, marked juiciness and pronounced “flavour”, falls within the highest category in this range of products.
We recommend removing it from the vacuum bag and leaving it in a cool, dry place, unsliced, for 24 hours before beginning consumption. As a general guideline, slices may be 2 mm thick.
