From each pig weighing more than 160 kg, two fresh pieces are obtained, each weighing approximately 625 grams.
Once the curing and maturation process is complete, the unit weight ranges between 350 and 400 grams.
It has a high iron content, reflected in its deep purple color, and such high energy value that, when enjoyed, just a few slices provide a noticeable feeling of renewed energy.
Its organoleptic characteristics are unique. For tasting, we recommend removing it from the vacuum bag, leaving the piece in a cool, dry place for 24 hours, and slicing it to a thickness of around 1.7 mm. In the pork cut, the presa is located between the upper part of the shoulder and the loin.
