Authentic artisan sheep’s cheese made in Porzuna (Ciudad Real, Castilla-La Mancha) by the family company Villajos, with more than 25 years of experience

Milk and maturation

Made with raw milk from Manchega-breed sheep, it guarantees a firm texture and an ivory-colored interior. Its artisan aging takes place over 9 to 12 months, reaching its full organoleptic expression

Sensory profile

Appearance: it has a uniform creamy white color, similar to other artisan creamy cheeses.

Aroma: it offers a mild dairy aroma, with notes of freshness and fermentation, characteristic of traditionally made cheeses.

Flavor: mild, slightly sweet and gently tangy, complemented by a subtle salinity, resulting in a pleasant sensation on the palate.

Texture: The texture is creamy, moist and smooth both visually and to the touch, making it easy to handle and spread. On the palate, it melts pleasantly, delivering a smooth, unctuous experience.

Storage

The ideal temperature for preserving the cheese is in a cool place. Once opened, keep refrigerated at a temperature between 8 – 10 ºC.

Villajos cheese is crafted using traditional methods, through a process that, while more labor-intensive, ensures an unrivaled flavor full of nuance. The milk is collected in mechanical milking rooms with immediate refrigeration, allowing the cheese to retain its freshness without losing its natural aromas, since the milk is not exposed to high temperatures. Queso Manchego DOP Villajos is available in three varieties: semi-cured, cured, and aged, offered in different formats to suit each customer’s needs.
