Aged Goat Cheese, Quesería Collados

Collados Quesería aged cheese is made with pure goat’s milk. It is a local product from Granada that guarantees the very highest quality ingredients. Tradition requires a handmade process, with herds always raised in complete freedom. And because it is 100% natural, its texture and flavor are wonderfully delicious.

The goats are happy and free-range, and both the milk and the cheese reveal notes of rosemary, thyme, lavender, rockrose and other shrubs from the Sierra Norte of Granada. Starting from this natural raw material, the cheese is made using a traditional process with only kid rennet and salt added.

Lightly toasted almonds, pistachios, peanuts and hazelnuts with a little salt are also excellent companions for enjoying this aged cheese.

Pairing: at Made in Spain Gourmet we recommend serving it as an appetizer or dessert, and it works very well with crianza red wines or a sweet wine such as Muscatel or Pedro Ximénez.

A melt-in-the-mouth cheese, with its unmistakable flavor, creamy texture and unique aroma. It can be mixed into salads, paired with jams, honeys, and even melted for burgers or baked pasta.

How do they make their cheeses?

They start with 100% Murciano-Granadina goat’s milk from wonderful goats that graze happily—essential for the flavors of their beloved cheeses. They then curdle the milk and transform it into a new product: cheese. At every step, the raw material is always of the highest quality. They follow a traditional cheesemaking process, enhanced with the necessary technological advances to ensure a first-class product. One of the key moments in the process is fermentation, where the magic happens.

Their cheeses mature from 4 to 8 weeks. The wait is worth it. From such a carefully managed production process and raw material of this caliber, the final product is excellent: pressed-paste cheeses with a tender rind and a touch of creaminess. Add to that the fact that consuming goat’s milk and its derivatives helps reduce cholesterol and supports the absorption of fats, proteins, calcium and minerals, and there are more than enough reasons to cut ourselves another little piece of this wonderful cheese. Because where there is cheese, there is happiness.

Because Collados Quesería cheese is artisan-made and comes from goats. And not just any goats, but goats to envy: those that live freely in the Sierra de la Sagra, in the north of the province of Granada. This mountain range has always sheltered goat herds. The fact that the goats graze happily on its slopes makes the milk they produce of the very highest quality. And this is the foundation of their artisan cheese production.

They have goats of every kind: some that pose for photos like true influencers, some that never stop all day long—up the hillside, down the hillside—or some that love eating gourmet pasture.

Quality raw material

The farmers, besides being passionate about their work, are responsible for selecting their best animals for breeding and milk production, thus maintaining the highest quality in our cheeses. They have always been committed to using the finest raw materials, which is why the goats on their farms are certified organic.

They grow up in a sustainable, peaceful environment and feed on pasture. One of their guiding principles is respect for the environment and animal welfare.

In a corner of La Sagra, Granada, this project was born. Collados Quesería began its adventure recently, in 2019. From the very beginning, the company's philosophy has always been respect for gastronomic tradition. Since day one, they have followed the ancestral traditions of the master cheesemakers of the Sierra de la Sagra, in the north of the province of Granada. By blending these cheesemaking traditions with the latest technological advances, they produce cheeses of the highest quality. To make them unique and unmistakable—true cheesemaking works of art—it is essential to select the finest raw materials, which is why they make them using pasteurized goat’s milk.
