Pairing:

Artisan Semi-Cured Manchego Cheese PDO is perfect to enjoy on its own or alongside a selection of Made in Spain products. Its smooth, balanced flavor, with a pleasant dairy aftertaste, pairs wonderfully with a variety of Spanish delicacies that enhance its flavor and texture.
Recommended pairings:

Extra Virgin Olive Oil from the region
A good extra virgin olive oil, such as Oro La Senda PDO Olive Oil, brings a fruity and slightly bitter touch that highlights the cheese's dairy notes, creating an exquisite fusion of flavors.

Artisan jams
Tomato jam or fig jam, both traditionally made with fruit from the region, add a subtle sweetness that contrasts perfectly with the creamy, lightly salted texture of Semi-Cured Manchego Cheese.

Acorn-fed Iberian ham
The fat of acorn-fed Iberian ham, with its deep umami flavor, pairs perfectly with the smoothness of the cheese, creating a blend of intense flavors that complement each other beautifully.

Breadsticks
Traditional picos breadsticks or pan de cristal, typical of the region, offer the perfect crunchy texture to accompany the cheese, allowing the flavors to develop in every bite.

Nuts such as almonds or walnuts
Almonds or walnuts, such as those from Les Garrigues, add a crunchy contrast and sweetness that pairs ideally with the cheese's creamy texture.

This Artisan Cured Manchego Cheese PDO is a journey of flavors that becomes even richer when paired with the finest Made in Spain products. Each combination enhances the authentic flavor of La Mancha, creating gastronomic experiences that celebrate the very best of Spanish tradition.

Los Villajos

Queso Villajos – Artisan Manchego Cheese PDO

Queso Manchego Artesano DOP Villajos is a true gem of our land. Made with raw milk from Manchega sheep, this cheese stands out for its quality and authentic flavor, thanks to a production process that preserves all the milk’s natural aromas. The Protected Designation of Origin (PDO) guarantees that every piece meets the highest quality standards, supervised by the Fundación Consejo Regulador de la DOP Queso Manchego. Villajos cheese is crafted using traditional methods, through a process that, while more labor-intensive, ensures an unrivaled flavor full of nuance. The milk is collected in mechanical milking rooms with immediate refrigeration, allowing the cheese to retain its freshness without losing its natural aromas, since the milk is not exposed to high temperatures. Queso Manchego DOP Villajos is available in three varieties: semi-cured, cured, and aged, offered in different formats to suit each customer’s needs.

Queso Villegas – Variety and Craftsmanship

Under the Villegas brand, we offer a variety of artisan cheeses made with raw or pasteurized milk. In our specialties, such as sheep’s cheese with rosemary, with paprika, and with rosemary and honey, we use raw milk, which brings unique taste and aroma notes, the result of an aging process that respects time and tradition. For those seeking a creamier, more delicate texture, we offer cheeses made with pasteurized milk, such as fresh-style and air-cured cheeses, whose production is based on slow pasteurization that maintains a balanced flavor without the intensity of raw milk. Each of our cheeses is the result of artisan production, rooted in deep knowledge of the process and the expert hands of our master cheesemakers. Thanks to this, every piece reflects the passion and commitment to quality that define us. Made in Spain Gourmet invites you to discover the world of artisan cheese with a deep, authentic flavor full of tradition. From raw-milk cheeses to those made with pasteurized milk, our range is designed to offer you the best of each process, always backed by the Protected Designation of Origin and an unwavering commitment to excellence.
