Eucalyptus Honey, Alemany 1879

Alemany eucalyptus honey is a monofloral honey with an amber / golden color.

It has aromas reminiscent of damp grass or even forest / wood. Its flavor is sweet, strong yet refreshing, which is why acidic notes may be found (a balance between sweetness and freshness).

Its flavor is very persistent and has a spicy note.

EUCALYPTUS

The essential oil from eucalyptus leaves is used as a nasal decongestant and to help fight respiratory infections.

It is used in ointments, tablets, inhalant candies, infusions, syrups or vapor treatments.

The oil is used topically as a treatment for muscle and joint pain, as well as to treat cold sores.

It also works as a natural mosquito repellent.

TIPS FOR USING EUCALYPTUS HONEY:

• Thanks to its refreshing, herbaceous aroma and flavor, eucalyptus honey is ideal for use in all kinds of pastry preparations, adding a fresh and pleasant touch while sweetening the recipe.

• It can also be used in cooking, both in cold recipes such as salads and in different types of meat and fish preparations, to give them an herbaceous and elegant touch.

APPLICATIONS:

• Add this honey to fruit and vegetable smoothies or hot vegetable creams (for example, pumpkin, carrot or artichoke cream, ...).

• Add to recipes for dairy desserts, chocolate-based desserts (brownies, coulant cakes, ...), sponge cakes, cookies, spice breads, waffles, muffins, ...

• Drizzle over sweet cakes made with seasonal fruit. For example, mille-feuille cakes with pastry cream and mandarin, or apple tarts.

• Drizzle over white fish before cooking (for example, when making sea bream en papillote, coat the fish with honey) or after removing it from the oven.

• Make tangy vinaigrettes with honey to drizzle over green salads, legume salads, meats and fish. For example, make a vinaigrette with white wine vinegar, extra virgin olive oil, orange and grapefruit juice, and eucalyptus honey.

Since Montsec is a harsh and difficult land for cultivation, this activity offered them a valuable alternative. The distinctive character of Alemany turrón comes from a 19th-century recipe that gives the paste its characteristic white color. Slow cooking, locally sourced nuts, and a carefully selected rosemary honey are part of the secret behind the turrón’s distinctive flavor.
