Organic Aquafaba by Casa Amella

Casa Amella Organic Aquafaba is the plant-based alternative to egg that has transformed contemporary baking and cooking. It is the cooking liquid from local organic chickpeas, rich in plant proteins and with natural emulsifying and foaming properties that allow it to replace egg white in countless recipes.

It is the fastest-whipping aquafaba on the market: in just 3 minutes per 100 ml, using a whisk or food processor, you will obtain a firm, stiff-peak texture. Simply shake the container, pour into a large bowl (it increases considerably in volume when whipped), and beat.

Versatile and surprising, it is perfect for preparing mousses, meringues, mayonnaise, plant-based carbonara sauce, vegan omelets, crispy batters, or cocktails such as pisco sour.

Practical equivalent:
30 ml of aquafaba = 1 egg white.

When Dani founded Casa Amella in his uncles’ garage back in 2002 in Castellterçol, he wanted to share with more people the privilege he enjoyed: healthy cooking based on village products grown with care and respect for the land. The aromatic stews that his mother, Carmen, prepared following the tradition of his grandmother María Josefa helped Dani appreciate home cooking from childhood. Meanwhile, days spent in nature with his grandfather Isidre, a farmer, and his grandfather Francisco, an animal lover who enjoyed going hunting without firing a single shot, taught him where the ingredients on his plate came from and the importance of caring for the environment.
