What is the Picual olive variety like?
The Picual olive is the most widely grown variety in Spain and one of the most recognized worldwide for its exceptional quality in producing extra virgin olive oil. It is characterized by its oval shape and medium to large size, with a color that ranges from intense green to black when ripe.
The oil obtained from the Picual variety stands out for its high oxidative stability thanks to its elevated content of polyphenols and natural antioxidants. Sensorially, it offers a robust, balanced profile, with herbaceous and fruity notes reminiscent of green leaf, tomato and banana, together with a characteristic pungency and bitterness that bring complexity and personality to the oil.
The Picual tree is hardy and well adapted to different climates, especially warm and dry conditions, which facilitates extensive and sustainable cultivation.
