Oricios Caviar (sea urchins), Agromar
Agromar’s commitment to quality leads them to choose raw ingredients from our coasts, respecting the product and its nature while maintaining a traditional artisanal production method refined over decades.
A traditional Cantabrian preserve with an unforgettable sauce.
Agromar’s oricios (sea urchins) are harvested on the Cantabrian coast from November to April, and the roe you find inside the shell is exactly what you will find when you open this tin. Pure wild Cantabrian flavor as the house’s signature, pioneers in canning the world’s first sea urchin preserves, and deservedly proud of it.
Paired with cava or a white wine, they make the ideal complement. They can also be used to finish fish dishes.

Pairing and gastronomic experience
Agromar’s preserved Oricios are among the most exclusive and representative preserves in Asturian gastronomy. Artisanally made in Gijón, they preserve all the intensity and purity of authentic Cantabrian sea urchin, with a creamy texture and a deeply marine, elegant, and delicate flavor.
Their limited production and gastronomic complexity make this gourmet preserve a true haute cuisine product, appreciated by chefs and lovers of authentic ingredients.
🟤 How to enjoy Agromar Oricios
To appreciate all their nuances, we recommend serving them slightly chilled, without excessive cold, allowing their iodine-rich aromas and natural creaminess to emerge.
They are perfect:
- On thin bread or toasted brioche
- In gourmet spoons as a premium appetizer
- With creamy free-range eggs or soft scrambled eggs
- Over fresh pasta or seafood risotto
- In delicate canapés and creative cuisine
- As an accompaniment to shellfish and white fish
They can also be enjoyed on their own, straight from the tin, for a pure and authentic gastronomic experience.
Recommended pairings
The intense, elegant flavor of oricios pairs especially well with:
- Brut Champagne or Blanc de Blancs
- Atlantic, mineral Albariños
- Fresh, structured Godello
