They then curdle the milk and transform it into a new product: cheese. At every step, the raw material is always of the highest quality. They follow a traditional production process, enhanced with the technological advances needed to ensure a first-class product. One of the key moments in the process is fermentation, where the magic happens.
Their cheeses mature from 4 weeks to 8. The wait is worth it. From such a carefully controlled production process and raw material of this caliber, the final product is excellent: pressed-paste cheeses with a tender rind and a touch of creaminess. Add to that the fact that consuming goat’s milk and its derivatives helps reduce cholesterol and supports the absorption of fats, proteins, calcium, and minerals, and we have more than enough reasons to cut ourselves another little piece of this wonderful cheese. Because Collados Quesería cheese is artisan-made and comes from goats. And not just any goats: truly enviable goats, living freely in the Sierra de la Sagra, in the north of the province of Granada. This mountain range has always been a haven for goat herds. The fact that the goats graze happily on its slopes means the milk they produce is of the very highest quality. And this is the foundation for making their artisan cheese.
