Semi-cured goat cheese, Quesería Collados

Collados Quesería semi-cured cheese is made with pure goat’s milk. It is a local product from Granada that guarantees the very highest quality ingredients. Tradition in the process means it is made by hand and the herds always roam in complete freedom. And because it is 100% natural, its texture and flavor are guaranteed to be wonderfully delicious.

How do they make their cheeses?

They start with 100% Murciana-Granadina goat’s milk, from wonderful goats that graze happily—essential for the flavors of their beloved cheeses. They then curdle the milk and transform it into a new product: cheese. At every step, the raw material is always of the highest quality. They follow a traditional production process, enhanced with the technological advances needed to ensure a first-class product. One of the key moments in the process is fermentation, where the magic happens.

Their cheeses mature from 4 weeks to 8. The wait is worth it. From such a carefully controlled production process and raw material of this caliber, the final product is excellent: pressed-paste cheeses with a tender rind and a touch of creaminess. Add to that the fact that consuming goat’s milk and its derivatives helps reduce cholesterol and supports the absorption of fats, proteins, calcium, and minerals, and we have more than enough reasons to cut ourselves another little piece of this wonderful cheese. Because where there is cheese, there is happiness.

Because Collados Quesería cheese is artisan-made and comes from goats. And not just any goats: truly enviable goats, living freely in the Sierra de la Sagra, in the north of the province of Granada. This mountain range has always been a haven for goat herds. The fact that the goats graze happily on its slopes means the milk they produce is of the very highest quality. And this is the foundation for making their artisan cheese.

They have goats of every kind: those that pose for photos like true influencers, those that never stop all day—up the hillside, down the hillside—or those that like to eat gourmet pasture.

Quality raw material
The livestock farmers, besides being passionate about their work, are responsible for selecting their best animals for breeding and milk production, thereby maintaining the highest quality in their cheeses. They have always been committed to using the best raw material, which is why the goats on their farms have organic production certification.

They grow up in a sustainable, peaceful environment and feed on pasture. One of their guiding principles is respect for the environment and animal welfare.

In a corner of La Sagra, Granada, this project was born. Collados Quesería began its adventure recently, in 2019. From the very beginning, the company's philosophy has always been respect for gastronomic tradition. Since day one, they have followed the ancestral traditions of the master cheesemakers of the Sierra de la Sagra, in the north of the province of Granada. By blending these cheesemaking traditions with the latest technological advances, they produce cheeses of the highest quality. To make them unique and unmistakable—true cheesemaking works of art—it is essential to select the finest raw materials, which is why they make them using pasteurized goat’s milk. The authentic flavor of days gone by. A treasure that is increasingly sought after today. These goat cheeses are the kind that make history.
