Origin and production
Produced in Baena, Jaén, home to some of the world’s finest extra virgin olive oils, Castillo de Canena selects its best EVOO and matures it in American oak barrels previously seasoned with amontillado from solera at Lustau, one of Spain’s most prestigious wineries.
During the process, the oil absorbs the complex aromas of the wine, creating a perfect fusion: toasted nuts, noble wood notes, ripe fruit and hints of mushrooms that can be perceived in every drop.
