Goat or Sheep Cheese It’s possible you’ve wondered what differences you can find between a cheese made from goat’s milk or from sheep’s milk. Good question. What we can guarantee is that both are delicious and highly recommendable — we’d eat either every day! The milk of the animal they come from: as the name indicates, they are produced from two different animals, the goat and the sheep. Flavor: although both are strong and intense, sheep cheese is a bit more oily, while goat cheese is more tangy. You can verify this by tasting them side by side. Nutritional value: Goat cheese is rich in protein and low in potassium, while sheep cheese is also a good source of protein as well as calcium. This is the most classic cheese from Quesos Los Vázquez (Seville), made following the founder Ángel Vázquez’s recipes from more than 60 years ago. What we might call a traditional goat cheese, with all its characteristic traits. Made with 100% native raw goat’s milk and carefully and lovingly matured for 7–8 months. It has an intense flavor and a distinct personality. Its rind is edible. We would pair it with a young red or young white wine, and serve it with Paul & Pippa crackers or a mix of nuts (walnuts, hazelnuts, almonds). It can also be paired with extra virgin olive oil, honeys or preserves.
