How is Sherry vinegar made?

One of our most renowned gourmet products, made from one of Spain's most storied wines, the Sherry wine.

What is vinegar?

Vinegar is an acidic liquid used as a “condiment.” It is produced by the action of bacteria of the genus Acetobacter that, in the presence of air, oxidize the ethanol contained in wine or other fermented alcoholic beverages into acetic acid.

Its name derives from the French "vin aigre" (sour wine).

Not all vinegars are the same

How is Sherry Vinegar produced?

The place where these vinegars are produced is known as the Marco de Jerez, and it is the same area of origin for the excellent Sherry Wines. Sherry Vinegar is aged following the same genuine method as Sherry Wines, the traditional solera and criaderas system. This method is based on a prolonged aging that sometimes exceeds 10 or 20 years and explains the complexity of these vinegars. How does this method work?

The solera and criaderas system is a system of casks stacked in rows one above the other, with the row at floor level containing the oldest vinegars, and the highest row containing the newest vinegars. We can explain it in 3 steps:
  • Step 1: for the vinegar to be bottled, it is drawn exclusively from the solera (the row of casks at floor level), which contains the oldest vinegars.
  • Step 2: the amount bottled from the solera is replaced by younger vinegar coming from the immediately upper row, or first criadera.
  • Step 3: the same replacement operation for the vinegar we extracted occurs in the second row, or second criadera, using the vinegar from the row immediately above it (the third criadera), and so on.
This same operation is repeated with the vinegar contained in the third row of casks, the second criadera, and so on. For example, the Pedro Ximénez Sherry Vinegar Reserva from Bodegas Lustau, aged in American oak casks following the Solera and Criaderas System.
