However, well-educated young people tend to migrate to other places where their professional development may be better than in the Asturian paradise. Everyone? No. There are young people who still believe they can grow and evolve the family business right from Asturias. Dimas Noval is the second generation of a family business that has specialized in live seafood in Gijón for over 40 years. And although he has worked in many positions within the family company, and even on other continents, he knows where life is best and where he wants to live: Asturias. So, being the restless and creative person he is, he thought he should create a preserves brand that would, on the one hand, provide an indisputable origin and convey all the authority Asturias and the Cantabrian Sea can offer, and on the other hand, innovation in the sector was essential to have a chance to stand out from the start. And he was right. In just two years the company has already found its place and gained recognition. It didn’t fall from the sky, though. They stormed the market by making countless product presentations and letting people taste the product so they could notice, at first impact, that La Mar de Tazones belongs to the select club of Spanish premium preserves. Why? Because they apply the right recipe: excellent raw material, backed by years of experience in the sector; in their factory they extract the precious meats and they have the IFS quality seal, the most distinctive international standard. And an elegant, understated packaging, like the boxes of the most precious jewels. When you open them you know you’re facing a different, exquisite product. I’m one of those who can’t resist, and at least once a week I enjoy spider crab for dinner — in different recipes, of course. The experience of so many years in the seafood sector is their true differentiator. They control the product at every moment throughout the entire process, from origin to the moment a consumer buys it in a specialty shop. Their Quality Department thoroughly monitors analyses and the traceability of the seafood… Little by little the brand is expanding into Europe, Oceania, Asia and even the United States, where Made in Spain Gourmet is presenting the product across different states. It was one of the stars of our booth in Chicago in May at the National Restaurant Association; chefs and culinary experts were surprised by its quality, and we know it will succeed. Premium spider crab, preserved in its natural state It’s an absolute delight. By mixing the meats of the spider crab and the female spider crab preserved in their natural state, you find the coral — the roe of the females — mixed with the meat of the males. This hand-shredded spider crab mixture is characterized by its intense flavor, which makes it a super-tasty, unique and very versatile product to enjoy on its own or as a complement in countless recipes (it’s incredible with pasta). Oysters with Albariño and natural The oysters they select for their preserves come from the Galician rías and are wild oysters. They are not farmed; they are collected on the estuary shores one by one, which is why their size is not uniform. Wild oysters give the preserve a special touch, and of course the recipe they prepare is secret. As a result, the oysters keep a very natural flavor, with a special touch thanks to a vinaigrette made with oil, vinegar, Albariño, peppers and onion; and in the natural version, the oysters retain a very natural taste with a perfect hint of salt that makes them unique, while the seawater becomes a delicious marine broth. How to enjoy La Mar de Tazones preserves The preserves from La Mar de Tazones are very versatile, basically because they are of the highest quality, and that helps them pair with everything — the raw material is excellent. You can enjoy them as tapas, appetizers, or also cook a great pasta or a rice dish with them, use them as a filling for fish or for a vegetable like pepper to create one of the most iconic dishes of northern Spain. They can also be used in salads, tartare, seafood salads (salpicón) or seafood cocktails. And I repeat: simply on crackers or regañás, with a drop of extra virgin olive oil, they’re spectacular. As for the oysters, they are meant to be an elegant tapa: simply open and share them with friends. For a special occasion, we can pair them with a Pere Ventura Vintage Rosé Cava, and with that pairing the oysters reach a sublime level.
