Once again we must be grateful for the benign weather of our beloved Penedés, which has given us the opportunity for an excellent 2019 harvest.
This week we began the tirage (bottling) for the 2019 cava. This consists of bottling the base wine and adding the tirage liquor. This tirage liquor is nothing more than wine and sugar intended to carry out the secondary fermentation. The tirage liquor is added to the base wine together with the yeast to trigger the secondary fermentation.
We are very pleased with the quality of the wines we have obtained. We believe they will be remembered as outstanding wines and cavas. Thanks to this year’s favorable weather conditions, harvest time arrived with grapes in very good health. Spring rains and temperatures slightly lower than the average of previous years allowed for a more gradual ripening, placing the grapes at peak quality. As a result, we obtained grapes with ideal alcohol content and acidity for producing base wines for cava.
Humidity and temperature conditions were ideal for obtaining grapes with the perfect alcohol content and acidity for making base wines for cava. Therefore, we can say that the 2019 harvest will be an excellent vintage, and after bottling and aging in our barrels for between 24 and 60 months, it will yield cavas of exceptionally high quality.
In this way, we will continue to convey to our customers that Vins El Cep remains committed to wines and sparkling wines of the highest quality, for the most demanding palates who want the very best products.
Let us remember that this year Vins El Cep celebrates its fortieth anniversary (1980–2020); therefore, we will be celebrating this important milestone throughout the year, which inspires us to keep improving year after year.
